  1. Ingredients :Serves 4-6

  2. 5 cups 220 g Filling ingredients

  3. 30 g 1 2 1/2 spoons 1 tablespoon 150 ml Skin ingredients

  4. 150 g 120 ml Water

  5. Sugar

  6. Red beans

  7. Pandanus leaf, tie into a knot

  8. Castor sugar

  9. Oil

  10. Glutinous rice

  11. Water

  1. To prepare filling :

  2. Boil red beans and 1 pandanus leaf inwater for 30 minutes.

  3. Drain and blend into a fine paste.

  4. Heat 1 tablespoon oil in a wok and cookbean paste with sugar till thick.

  5. Cool and use as filling.

  6. Cut into 20 pieces.

  7. To prepare skin :

  8. Mix together the ingredients. Knead into asmall dough, then divide into 20 equal pieces.

  9. Shape each piece of dough into a ball.

  10. Flatten each and put 1 piece of filling inthe centre.

  11. Gather up the edges and seal. Roll intosmooth ball again.

  12. Bring water to the boil. Stir in sugartill dissolved.

  13. Add red bean balls and cook 5 minutestill they rise to the surface.

  14. Dish up syrup and balls into individualbowls.

  15. Serve hot.
