  1. 3 boxes Corn Muffin Mix

  2. 1 Small Box Yellow Cake Mix

  3. 1 can Whole Kernel Corn , well drained

  4. 1 Small Onion

  5. 1 Small Green Pepper

  6. 2 Tbsp Shortening

  1. Place shortening in a baking dish (use a black cast iron skillet if you have one) and place in hot oven.

  2. Mix corn muffin mix and cake mix in same bowl or add together after mixing each separately.

  3. Add well drained can of corn to mixture with diced pepers and onion.

  4. Remove baking dish from oven and pour batter into pan, until pan is half full.

  5. Return to hot oven and bake at temperature and time specified on corn muffin package or until well browned.
