  1. Key Lime Pie

  3. 1 tb unflavoured gelatin

  4. 1 c sugar

  5. 1/4 ts salt

  6. 4 eggs,separated

  7. 1/2 c key Lime juice, strained

  8. 1/4 c water

  9. 1 ts grated Key lime peel

  10. 1 c heavy cream, whipped

  11. 1 baked graham cracker crust

  12. Mix the gelatin, half of the sugar and the salt in a saucepan. In

  13. another pan, beat the egg yolks well. Add the lime juice and water

  14. to the egg yolk mixture. Stir the egg yolk mixture into the gelatin

  15. mixture. Cook over low heat, stirring constantly, just until the

  16. mixture comes to a boil. Remove from heat, stir in grated peel.

  17. Chill, stirring occasionally, until the mixture mounds slightly

  18. when dropped from a spoon.

  19. Beat the egg whites until soft peaks form. Gradually add the

  20. remaining sugar, beating until stiff. Fold into the chilled gelatin

  21. mixture. Fold in whipped cream (reserve some for topping, if desired).

  22. Pour into the baked crust. Chill until firm.
