  6. 3 eggs,

  7. 1/2 cup sugar,

  8. 3 egg yolks &

  9. 1 tsp.

  10. vanilla in bowl. Using a mixer with a balloon whip, if you

  11. have one, whip on high till slightly thickened &

  12. lemoncolored, about 34 minutes. Turn mixer to low &

  13. continue to mix. Beat 2 egg whites till stiff but not dry,

  14. about 23 minutes. Add flour mixture to egg mixture. Mix on

  15. medium a few seconds. Increase speed to high & beat another

  16. few seconds. Using a rubber spatula, vigorously fold in

  17. beaten egg whites. Pour batter into cake pan. Smooth top.

  18. Bake till toothpick inserted in center comes out clean,

  19. about 25-30 minutes. Remove from oven. Let cake cool in pan

  20. about 20 minutes. Invert onto cake rack, then invert onto

  21. cake plate. (cake will be right side up now.) Custard:

  22. heat milk & cream in saucepan over medium heat. Bring to a

  23. boil. While cream is heating, place sugar, eggs, egg yolks

  24. & cornstarch in mixing bowl. Beat, using a balloon whip,

  25. slightly thickened & lemoncolored, about 4 minutes. When

  26. cream is boiling, remove bowl from mixer, then pour boiling

  27. cream into beaten eggs & whisk to blend well. Return

  28. mixture to saucepan & heat over medium heat. Stir

  29. constantly, till mixture reaches temperature of 185, about 3 minutes. Remove from heat. Add

  30. 2 tsp. vanilla & whisk

  31. together. Pour custard into stainless steel bowl. Set bowl

  32. over ice water & cool to a temperature of 4045 degrees,

  33. about 25 minutes. When custard is cool, fold in semisweet

  34. chocolate & mix well. Refrigerate till needed. To assemble,

  35. slice cake horizontally into 2 equal layers. Place top

  36. layer onto flat surface. Sprinkle each layer w 1/2 cup

  37. marsala. Let set 5 minutes. Evenly spread chilled chocolate

  38. custard over top layer. Invert bottom layer on top & press

  39. gently into place. Smooth custard around sides of cake.

  40. Refrigerate 2 hours before slicing. To serve, dust top of

  41. cake w cocoa. Cut into wedges.
