  1. 1 1/4 lbs. boneless beef chuck shoulder or chuck eye steaks (marinate chuck eye steaks 30 minutes or up to 6 hours), cut 1 inch thick

  2. 1/4 cup Jamaican hot steak sauce

  3. 1/2 tsp. crushed red pepper pods

  4. 2 tbs. each packed brown sugar and fresh lime juice salt, if desired

  1. Combine steak sauce, sugar and lime juice; reserve 2 tbs.marinade.

  2. Place beef steaks in plastic, bag; add remaining marinade, turning to coat.

  3. Close bag securely and marinate in refrigerator 6-8 hours (or overnight, if desired), turning occasionally.

  4. Remove steaks from marinade and place on grid over medium coals.(Test about 4 inches above coals for medium with.4-second hand ount.)

  5. Grill 14 - 20 minutes for rare (140 degrees F) to medium (160 degrees F), turning once.

  6. Brush with reserved marinade during last 2 minutes of cooking.

  7. Season with salt, if desired.

  8. Carve into thin slices.
