  7. 1 each Cut up chicken (3 1/2 lbs)

  8. 1 each Freshly ground peppr to tast

  9. 1 tablespoon Olive oil

  10. 1/2 cup Onion -- chopped

  11. 1/2 cup Green pepper -- chopped

  12. 1 each Jalapeno ppr.,chop -- rem.seed

  13. 1 each Garlic, large clove -- minced

  14. 1 teaspoon Cumin -- ground

  15. 1 each Tomato (med) peeled/chopped

  16. 1 tablespoon Lemon juice

  17. 1 can Black Beans (15 oz)

  18. Sprinkle chicken with freshly ground pepper to taste. In a 12 inch skillet,

  19. saute chicken in olive oil about three minutes on each side; remove from pan.

  20. To pan drippings, add onion, green pepper, jalapeno pepper and garlic. Cook two minutes, or until onions are softened. Stir in cumin, tomatoes,

  21. lemon juice and black beans. Return chicken to pan; cover and simmer 20

  22. minutes. Remove lid and continue to cook until chicken is done and juices run

  23. 10 minutes. Serve with rice. Preparation time:

  24. 10 minutes.
