  1. 4 large portabella mushrooms, stems removed

  2. 1/2 cup olive oil

  3. 3 tablespoons balsamic vinegar

  4. 1 tablespoon chopped garlic

  5. 1 tablespoon. chopped shallot

  6. 1/4 teaspoon salt

  7. 1/4 teaspoon ground black pepper

  8. 4 sesame seed buns, split and toasted

  9. 1 medium red onion, sliced

  10. 1 medium tomato, sliced

  11. 2 cups mesclun salad mix

  12. 8 stalks grilled asparaus, optional

  13. 4 slices Cheddar cheese, optional

  1. Prepare outdoor grill, placing grill rack 5 inches from heat source, or preheat broiler. In a small bowl, combine vinegar, garlic, shallot, salt and pepper. Slowly whisk in olive oil. Place mushrooms in a shallow dish, cover with vinegar marinade, let mushrooms stand in marinade for 20 minutes to 2 hours.

  2. Grill or broil mushrooms until tender, about 3 to 5 minutes per side. Slice mushrooms and place in bun. Place one slice of onion and tomato on the mushrooms, a small amount of mesclun salad mix, top with asparagus and cheddar, if desired.
