  1. 3 1/2 lbs 1589g / 56oz Lamb loin or rib chops - (to 4 1/2) - trimmed

  2. 3/4" to

  3. 1 1/4" thk

  4. 1/4 cup 59ml Dried Greek oregano

  5. 1/2 cup chopped fresh oregano

  6. 6 Garlic cloves - chopped

  7. 1 teaspoon 5ml Salt

  8. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  1. With a knife, nick edges of chops in several places to prevent curling. In small bowl, combine remaining ingredients into a paste and rub all over chops.

  2. Cover bowl or place whole works in a resealable plastic bag. Marinate for 2 hours at room temperature or refrigerate overnight.

  3. Grill chops over medium-hot coals for 3 to 5 minutes on each side, turning once or twice. Set aside for 5 minutes before serving.

  4. This recipe yields 6 to 8 servings.
