Ingredients Jump to Instructions ↓

  1. 1 moist yellow cake mix , dry

  2. 2 eggs

  3. 1/3 cup butter , softened

  4. 1/8-1/4 cup water*

  5. 3/4 cup dried strawberries**, chopped

  6. 3/4 cup white chocolate chips

  7. Natural strawberry flavored cream cheese , optional

Instructions Jump to Ingredients ↑

  1. Combine cake mix, eggs, butter and water and stir until well mixed.

  2. Add berries and chips and continue to stir until just combined.

  3. Roll into tablespoonful size balls on baking stone or lightly greased cookie sheet.

  4. Bake 12-14 minutes at 350 until edges are lightly browned.

  5. Let cool 5 minutes before removing to cooling rack.

  6. If desired, spread cookies with thin layer of strawberry cream cheese, after cooled.

  7. *PLEASE NOTE: add water a bit at a time until the dough is slightly moistened but still stiff enough to "roll" into balls. If the cookies will be expected to sit for a day or more, the berries will continue to moisten the cookies, so a slightly stiffer dough will probably yield a better outcome. The softer cookies are still delicious, but they're so moist, they fall apart, even though they are cooked through. :)

  8. **Dried strawberries can often be found in the bulk health or organic sections, online, or can be found in many "berry blend" packages. If using a berry blend, I recommend using as many strawberries as you can find in the bag, then cherries, raspberries or cranberries to make 3/4 cup
