  1. 1/4 cup olive oil

  2. Finely grated zest and juice 2 lemons

  3. 4 garlic cloves, crushed

  4. 500g lamb steaks, cubed

  5. 8 bamboo skewers, soaked

  6. 1 onion, cut into wedges

  7. Tzatziki, to serve

  8. Herbed rice:

  9. 2 cups cooked rice

  10. 2 tablespoons chopped parsley

  11. 2 teaspoons grated lemon zest

  12. 2 teaspoons olive oil

  1. In a shallow dish combine oil, lemon zest and juice, parsley and garlic. Season to taste. Add lamb, tossing to coat. Cover and marinate in the fridge for 20 minutes.

  2. Preheat a barbecue plate or char-grill on high. Thread lamb onto skewers alternately with onion. Barbecue skewers for 4-5 minutes, basting occasionally and turning, until cooked to your liking.

  3. Herbed rice: In a large bowl, combine rice, parsley, zest and oil. Season to taste. Serve kebabs with rice and tzatziki.

  4. Top tip You can add cubes of capsicum to the skewers if you like, but remember this will increase the price.
