  1. 1/2 onion; chopped

  2. 2 cloves garlic; crushed

  3. 1/2 pound sliced fresh mushrooms

  4. 1 tablespoon olive oil

  5. 15 ounces canned tomatoes; diced

  6. 1 cup red wine

  7. 1 cup beef broth

  8. 1/2 teaspoon basil

  9. 1/4 teaspoon oregano

  10. salt and pepper to taste

  11. 1 whole chicken; cut up

  12. 1/2 cup flour

  13. 2 tablespoons olive oil; for frying

  1. Saute onion, garlic and mushrooms in 1 tablespoon olive oil until translucent.

  2. Add tomatoes, wine and broth and simmer and reduce 5 minutes.

  3. Add seasonings.

  4. Brown floured chicken pieces in 2 tablespoons olive oil until golden.

  5. Transfer to an ovenproof casserole dish, cover with sauce.

  6. Bake at 375º for 30 minutes.

  7. NOTES : Serve with buttered pasta or rice.
