  1. 1/4 cup olive oil

  2. 1 (4-pound) salmon side with skin

  3. 2 lemon s, sliced, plus

  4. 2 lemons for garnish

  5. 1 medium onion , sliced

  6. 1 bay leaf

  7. 6 peppercorn s

  8. 1/4 cup half and half 1/4 cup chopped fresh parsley

  1. Preheat oven to 350 degrees.

  2. Oil a piece of heavy-duty aluminum foil with about 1 teaspoon olive oil and lay it on a jelly-roll pan. Place the salmon on the foil, skin side down. Drizzle the remaining oil over the fish. Arrange the lemon slices, onion slices, bay leaf, and peppercorns on and around the fish, even underneath. Drizzle with the cream. Bring the long edges of the foil up on top of the fish and fold two or three times, leaving room for steam; fold the ends to seal the package.

  3. Bake until the salmon flakes, about 40-45 minutes.

  4. To serve, remove the skin and bay leaf and garnish with lemon and chopped parsley.
