  1. 1 large salmon

  2. 2 cups of water

  3. 1/2 cup Zinfandel wine

  4. 1/4 cup lemon juice

  5. 1 medium onion sliced

  6. 1 teaspoon kosher salt

  7. 1 teaspoon pepper corns

  8. 2 bay leaves

  1. Combine above ingredients. Make sure the water covers the salmon. Cover with aluminum foil. Bake for 25 minutes at 400 degrees.

  2. Test to see if it flakes if not, cook longer. Chill for two hours. Prepare one day in advance garnish with cucumbers, lemon and dill.
