  1. Tomato Basil Butter

  2. 1/4 cup 49g / 1.7oz Butter or margarine - softened

  3. 1 tablespoon 15ml Finely-chopped shallots

  4. 1 tablespoon 15ml Chopped fresh basil

  5. 1 tspn dried basil leaves

  6. 1 tablespoon 15ml Finely-chopped sun-dried tomatoes in oil

  7. Tuna Steaks

  8. 6 Tuna steaks,

  9. 1" to

  10. 1 1/2" thk - (4 oz ea)

  11. 1/3 cup 78ml Balsamic vinegar

  12. Fresh basil leaves - for garnish

  1. Tomato Basil Butter: Mix all ingredients. Cover and refrigerate at least 1 hour to blend flavors.

  2. Tuna Steaks: Place vinegar in shallow glass or plastic dish. Add fish, turning to coat with vinegar. Cover and refrigerate, turning once, at least 15 minutes but no longer then 1-hour.

  3. Heat coals or gas grill.

  4. Drain fish; discard vinegar. Cover and grill fish 4 inches from medium heat 10 to 15 minutes, turning once, until fish is cooked to your preference. Tuna cooked medium-rare is considered best by most chefs.

  5. Immediately top each fish steak with Tomato Basil Butter. Garnish with basil leaves.

  6. This recipe yields 6 servings.
