  1. white rice

  2. sugar

  3. milk

  4. 2 eggs

  5. corn starch

  6. raisins

  7. lemon juice

  8. cinnamon

  9. nutmeg

  1. Put 1/2 cup of uncooked white rice and 1 cup of water in a sauce pan. Heat to boiling and then reduce heat to simmer. Simmer for about 14 min...all water should be absorbed.

  2. Heat oven to 350 degrees. Mix 1/2 cup of sugar, 1 tablespoon of corn startch, dash of salt, and 2 beaten eggs, and 2 1/2 cups of milk. Beat w/beaters.

  3. Add 1 tablespoon of lemon juice, 1/2 cup raisins, 1/4 cup of sugar, and 1 tablespoon of vanilla to the mixture. Add the rice. Mix and sprinkle with nutmeg & cinnamon.

  4. Put in a buttered 1 1/2 qt. casserole dish. You will want to put the casserole dish inside another dish that contains some water. Bake 1 1/2 hours. You will need to stir to keep the raisins from staying on the bottom.
