  1. Method : Cut and clean the sardines thoroughly Heat the oil in a frying pan and cook the ga rlic cloves until they are softened. Add the sardines an d fry for 4-5 minutes. Sprinkle the lemon rind, parsley and seasoning over the top. Cut the tomatoes in half and rub them on to the toast. Discard the skins. Serve the sardines with the tomato toast.
