  2. BERRIED SPINACH SALAD

  6. 2 Whole skinned boned chicken

  7. Breasts about 1 1/4 lb

  8. 3 tb Vegetable oil divide

  9. 1/2 ts Salt

  10. 1/4 ts Pepper

  11. 1 10-oz bag spinach washed

  12. Dried and stems removed

  13. 1 pt Strawberries hulled and Cut in half 1 sm Sliced thin red onion

  14. 2 tb Cider vinegar

  15. 1 tb Sugar

  16. 1 t Poppy seeds

  17. Cut chicken into 1 inch cubes. In large skillet over

  18. medium heat, saute chicken in 1 Tb oil, until chicken

  19. is lightly browned and cooked through, about 5

  20. minutes; add 1/4 ts salt and pepper. With slotted

  21. spoon, remove chicken to large bowl; cool. Remove and reserve pan dripping in skillet. Tear spinach into bite size pieces. Place in bowl with chicken. Add the

  22. cut strawberries and onion. In small bowl, stir

  23. together vinegar, sugar, poppy seeds, the remaining 2

  24. Tb oil, and the remaining 1/4 ts salt and the reserved

  25. pan dripping until well blended. Pour over salad and toss lightly to combine. - - - - - - - - - - - - - - - - - -
