  1. 8 oz tapioca

  2. 7 1/2 oz soft brown sugar

  3. 1/2 tsp salt

  4. 1 1/2 pt water

  5. 4 oz grated coconut

  6. 1 1/2 tsp caster sugar

  1. Preparation (instructions) Add tapioca, brown sugar, salt and water in a pot and bring to boil. Reduce heat and simmer gently for about 12 minutes until mixture is thick and tapioca is tender. Remove from heat and pour into a lightly greased dish. Set aside to cool. Spoon out mixture and roll on coconut and caster sugar. Serve immediately.
