Creole Style Recipe 2, Melt the butter and in it cook the chopped onion and pepper until softened and yellowed; add the flour, stir until blended, then add the tomato pure e and salt; stir until smooth and boiling, then add the corn and parsley; stir until boiling throughout, then serve at once.

  2. For a more substantial dish add at the last, the beaten yolks of one or two eggs.

  3. Do not boil after the egg is added.

  4. If more convenient the flour may be omitted and two tomatoes, peeled and cut in small pieces, may replace the pure e.
