  1. 1 cup 62g / 2 1/5oz Chopped onion

  2. 1 Garlic - crushed

  3. 2 tablespoons 30ml Flour

  4. 2 1/4 cups 533ml Chicken broth

  5. 1/4 teaspoon 1 1/3ml Sugar

  6. Black pepper to taste

  7. 1 Bell pepper - diced (medium)

  8. 3 tablespoons 45ml Oil

  9. 1 Tomato paste - ( 6 oz.)

  10. 1/2 teaspoon 2 1/2ml Salt

  11. 1/4 teaspoon 1 1/3ml Tabasco sauce - (or to taste)

  12. 2 cups 125g / 4.4oz Cooked - cubed, chicken

  1. Saute onion, green pepper and garlic in oil until tender, stirring occasionally. Add flour, stir just until flour starts to brown. Stir in tomato paste, broth, salt, sugar and Tabasco sauce.

  2. Cook and stir until mixture comes to boil and thickens. Stir in chicken and black pepper.

  3. Simmer uncovered 5 minutes or until chicken in heated through. Serve over hot cooked rice.
