  1. 1/2 teaspoon ground mustard

  2. 1 teaspoon turmeric

  3. 1 teaspoon salt (ideally sea salt)

  4. 1 teaspoon ground ginger

  5. 1 teaspoon fresh coarse ground black pepper

  6. 1/2 teaspoon cinnamon

  7. 1/2 teaspoon cayenne pepper

  8. 1/2 teaspoon white pepper

  9. 3/4 teaspoon ground coriander

  10. 1/2 teaspoon nutmeg

  11. 1/2 teaspoon star anise

  12. 1/4 teaspoon clove (well ground)

  13. 1 teaspoon ground cumin

  14. 1/2 teaspoon allspice

  1. Grind peppercorns, coriander seeds and star anise. Mix all ingredients in a small bowl (or cup) until well mixed. Mix will keep for a little over a month. Tip: place some cling film directly over the mix to keep it fresher!
