  1. 2 pounds of medium shrimp cooked and ready to go

  2. 1/3 cup lime juice

  3. 1/3 cup lemon juice

  4. 1/3 cup orange juice

  5. 2 teaspoons honey

  6. 1 teaspoons of fresh mint chopped

  7. 2 cups mango fruit diced small

  8. 1 tablespoon of cilantro chopped

  9. 2 avocados

  10. 1 cucumber peeled and seeded

  11. 1 red onion diced small DRESSING:

  12. 1/4 cup of white tequila or substitute orange juice for alcohol

  13. 1/2 teaspoon coarse salt

  14. 2 tablespoons lime juice

  15. 1/4 teaspoon cracked pepper

  16. 2 tablespoons minced shallots

  17. 1/4 cup heavy cream

  18. 1 teaspoon minced garlic

  19. 1 stick butter cut up and left at room temperature

  20. 1 tablespoon fresh cilantro chopped

  21. 1 tablespoon honey

  1. Place shrimp in gallon sized zip lock baggie In bowl add the lemon, lime and orange juice Add the honey and fresh mint Add marinade to shrimp. Close tightly and marinate 4-6 hours In bowl, put diced mango, cilantro, cucumber and red onions. Let sit at room temperature 20 minutes Do not peel the avocado until you remove the shrimp from the marinade, then peel, pit and dice Remove shrimp from marinade with slotted spoon and add to other ingredients. Now you can add the peeled, pitted and diced avocado. Put mix in chilled martini glasses and top with “Tequila Lime Dressing” Garnish with mint or cilantro Tequila Lime Dressing: Combine the tequila, lime juice, honey, shallots, garlic, cilantro, salt and pepper in a sauce pan over high heat and bring to a boil Reduce liquid by half Stir in the cream and simmer for 3 minutes Add the butter and remove from heat Continue whisking until the butter is incorporated Cool slightly and drizzle over the salads Yield: serves 6 Notes: If you do not like the flavor of Tequila, you can substitute it with orange juice. Either way this is a delicious dressing for this salad.
