  1. 1 Boned salmon - (8 to 10 lbs)

  2. 1/4 cup 36g / 1 1/3oz Chopped fresh dill

  3. 3 Shallots - chopped

  4. 3 tablespoons 45ml Coarse-ground mustard

  5. 4 Garlic cloves - chopped

  6. 2 Lemons - sliced thin Salt - to taste Freshly-ground black pepper - to taste

  7. 3 cups 711ml Wood chips

  1. Recipe Instructions Soak wood chips in water for 30 minutes. Mix dill, shallots, mustard and garlic. Stuff salmon with mixture. Add lemon slices, salt and pepper. Oil outside of salmon. Put on grill. Use indirect heat. Put wood chips on top of coals. Cover grill. Cook for 10 minutes per inch thickness. This recipe yields 12 to 16 servings.
