  1. 906 g head green cabbage, outer leaves discarded, quartered, cored and thinly sliced

  2. 3 medium carrots, peeled and shredded

  3. 1/3 cup finely chopped green onion

  4. 1 1/2 tsp. salt

  5. 1/4 cup cider vinegar

  6. 1/4 cup sugar

  7. 2 tbsp. peeled, minced fresh ginger

  8. 1/2 tsp. crushed red pepper flakes

  1. Toss together sliced cabbage, shredded carrots, green onions and salt in a large bowl. Let stand 5 minutes. Combine vinegar, sugar, ginger and red pepper flakes in a small saucepan. Heat to a boil, stirring, over medium heat. Pour hot vinegar mixture over slaw and toss to coat.
