  1. 2 tbs butter

  2. 2 cups chopped white onion

  3. 4 fresh mushrooms chopped

  4. 1 stalk celery diced

  5. 4 cups chicken stock

  6. 4 cups diced potatoes

  7. 2 lbs mahi mahi diced in cubes

  8. season salt and ground pepper

  9. 2 tsp Old Bay seasoning

  10. 1 cup clam juice

  11. 1/2 cup flour

  12. 2 cans evaporated milk

  1. Melt butter over medium heat in large dutch oven. Saute onions mushrooms and celery until onions are translucent.

  2. Add chicken stock to the pot and cook 10minutes.

  3. Add fish and simmmer 10 more minutes.

  4. Season with Old Bay, season salt and pepper In a small bowl mix together clam juice and flour and then stir into soup.

  5. Remove from heat and stir in milk.
