  1. 1/2 cup 118ml Kosher salt

  2. 1 tablespoon 15ml Dried basil

  3. 1 tablespoon 15ml Coarsely ground black pepper - (fresh!)

  4. 2 Bay leaves - broken into pieces

  5. 2 1/4 teaspoons 11ml Garlic powder

  6. 2 1/4 teaspoons 11ml Dried thyme

  7. 1/8 teaspoon 0.6ml Cayenne pepper

  1. Actually, I've never made this exact recipe because I like more kick, so I increase the garlic and the cayenne (1tbl is a nice round number).

  2. Just coat the ribs liberally with the rub and pitch them on the pit for 6 hours (or thereabouts) at 250.
