  8. 5 Pounds Okra

  9. 1 Can Tomatoes (no. 2) or 1 lb.

  10. 2 Onions, large -- chopped

  11. 5 Pounds Shrimp -- cleaned

  12. 1 Can Frozen crabmeat

  13. 6 Crabs (or more as desired)

  14. Salt & pepper to taste

  15. Red hot pepper sauce

  16. Oil or shortening

  17. Garlic, bay leaf -- thyme>>

  18. 3 Fresh tomatoes or As desired Use large aluminum pot, NOT IRON. Wash, stem and cut okra into 1/2 pcs.

  19. Season with salt & pepper. Smother okra in as little oil as possible. When

  20. almost done, add onion. Cook onion until tender, add tomatoes. Let simmer,

  21. add remaining ingredients and simmer until done.

  22. If there is a favorite vegetable of the South, it is surely okra. Gumbo

  23. gets its name from the Choctaw Indian word 'Kombo' for any thick soup made

  24. with okra.
