  7. 1/4 c Vegetable oil

  8. 1 md Onion, chopped

  9. 4 ea Bay leaves crumbled

  10. 1 lg Eggplant

  11. 1/2 ts Chili powder

  12. 1/2 ts Salt

  13. 1 3/4 c Canned tomatoes

  14. 2 tb Red wine vinegar

  15. 1/2 ts Caraway seeds, bruised

  16. 1/4 c Lemon juice

  17. Heat oil in a skillet, add onion & bay leaves & cook 4

  18. to 5 minutes, stirring occasionally. Meanwhile, peel

  19. the eggplant, slice it then dice. Add pieces to

  20. skillet. Add rest of the ingredients. Raise heat

  21. till mixture begins to simmer then cover, reduce heat

  22. & simmer 20 minutes til the eggplant is very tender.
