  1. 3 c all purpose flour

  2. 2 c sugar

  3. 1 t salt

  4. 1 t soda

  5. 1 t cinnamon

  6. 3 egg s, beaten

  7. 1 1/2 c salad oil

  8. 1 1/2 t vanilla extract

  9. 1 (8oz) can crushed pineapple (undrained)

  10. 2 c chopped pecan s or walnuts (divided)

  11. 2 c chopped banana s

  12. Cream cheese icing (see separate recipe)

  1. Combine dry ingredients in a large mixing bowl. Add eggs & salad oil. Stir until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, one cup of pecans & bananas. Spoon batter into 3 well greased and floured 9 inch cake pans. Bake @ 350° for 25-30 minutes. Remove from pans and cool completely. Spread frosting between layers and on top and sides of cake. Sprinkle with 1 cup nuts.
