  1. 2 cups biscuit mix

  2. 2/3 cup milk

  3. 1/4 cup sugar

  4. 1 egg

  5. 1 teaspoon vanilla extract

  6. 1/2 teaspoon ground cinnamon

  7. 2 tablespoons butter

  8. 3/4 cup dried cranberries

  9. 1/3 cup pine nuts

  10. 1/4 cup crystallized pineapple chunks

  1. Preheat oven to 350 degrees F. For cake, in a medium bowl, stir together biscuit mix, milk, sugar, egg, vanilla, and cinnamon until moistened; beat about 30 strokes by hand until well combined. Set aside.

  2. For topping, place butter in a 9-inch cake pan; let stand in hot oven until melted. Remove from oven. Arrange dried cranberries, pine nuts and pineapple in bottom of pan; pour cake batter over ingredients.

  3. Bake 20 to 25 minutes, or until a wooden pick inserted in center comes out clean. Immediately invert cake onto serving platter; cool. Scrape any remaining fruit ingredients from cake pan and replace onto cake.
