  2. 6 good-quality bought salmon mousse (see note)

  3. Salmon roe (see note), to garnish

  4. Wafer biscuits, to serve

  1. Dip the base of each salmon mousse container in warm water for a few seconds, then invert onto serving plates.

  2. Garnish the top with a little salmon roe, and serve with wafer biscuits.
