  3. 2 scrambled or fried eggs

  4. 4 tbsp Chirmol crumble mexican cheese add fresh parsley Few tortilla chips on side to decorate with. Side dish of Salsa

  1. fry first corn tortilla in butter put black beans in center put second tortilla cook til lightly brown remove to plate. Fry 2 eggs I like my eggs medium white done but soft center. Add them next. Ladle on rich tomatoe sauce called Chirmol, crumble philidelphia or mexican cheese next which ever you prefer. Top off with parsley. Put tortilla chips around the border w/ small dish of salsa Verde to the side. Top off with Avocado slices. Chirmol Sauce: 3 large tomatoes 1 clove garlic 1/2 small onion 1.4 tblsp salt 1/2 tesp dried red pepper flakes 1/4 c. water Mince and peel bring to a boil and simmerabout 10 minutes, blend in food processor. Refrigerate up to 2 days. Salsa Verde: 8 tomatillos, husks removed, quartered 5 cloves of garlic 1 med white onion coarsley chopped 1 bunch cilantro 1 tsp salt 1 tesp vegteable oil 1 jalapeno seeds removed 3 large green chiles (Poblano, Ancho,Anahiem or Hatch)roasted and skins removed 2 tblsp lime juice Add all ingredients into food processor pusle until desired consistency. Better if made night before sitting in refrigerator until your meal is ready.
