  2. Ginger Icing (Cream Cheese Frosting with Candied Ginger)

  7. 4 tablespoons unsalted butter -- at room temperature

  8. 8 ounces cream cheese -- at room temperature

  9. 1 teaspoon vanilla extract

  10. 1 teaspoon fresh lemon juice

  11. 2 cups sifted powdered sugar

  12. 1 tablespoon thinly slivered candied ginger

  13. Beat the butter, cream cheese, vanilla, and lemon juice in a bowl until

  14. smooth. Gradually beat in the powdered sugar. Add the candied ginger.

  15. Spread on top of a spice cake such as carrot, banana, pineapple, etc.
