  1. 1 pound smoked salmon

  2. 8 ounces cream cheese

  3. 6 bagels, split and toasted

  4. 1 red onion, thinly sliced black pepper

  1. Arrange the smoked salmon in the center of a platter around the cream cheese. Arrange the bagels around the outside edge and scatter the onion slices over all. Serve black pepper on the side. Guests construct their own open-faced sandwich by spreading the bagel with cream cheese, topping it with slices of smoked salmon and onion, and sprinkling liberally with freshly ground black pepper. The platter can be prepared the night before except for the bagels. Toast bagels just before serving.
