  1. 3 eggs, beaten

  2. 1tbsp double cream

  3. 4tbsp fresh watercress, finely chopped

  4. 1tsp butter

  5. 50g cream cheese

  6. 50g good quality smoked ham

  1. Combine the eggs, cream and watercress and season really well. Heat the butter in a small omelette pan until foaming. Add the egg mixture and whisk for about a minute until most of it has set.

  2. Cook for a further minute, spoon the cream cheese over one half, add the ham and top with the fresh watercress. Fold the omelette in half and slip it straight on to a warm plate.
