  1. Rinse and soak the Mandarin peels, shred half portion and mince the remaining half.

  2. Mix the spareribs with marinade and the minced peels.

  3. Dust the spareribs with cornstarch and deep fry in hot oil until golden and done.

  4. Saute garlic, shallots, chili, mandarin peels and green onion in 1 tbsp oil. Sizzle wine and return the spare ribs. Stir in the sauce mix and heat through.
