  1. 1 cup 62g / 2 1/5oz Flour

  2. 1 teaspoon 5ml Baking soda

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1 cup 237ml Buttermilk

  5. 1 Egg - separated

  6. 2 tablespoons 30ml Butter - melted

  7. Cherry Sauce - (see recipe)

  1. Preheat waffle iron according to manufacturer's directions.

  2. In a medium bowl, whisk together flour, baking soda and salt. Whisk buttermilk, egg yolk and melted butter in a separate small bowl. In another small bowl, beat egg white until peaks form. Slowly add buttermilk mixture to dry ingredients and gently mix; fold beaten egg white into batter.

  3. Cook in waffle iron according to manufacturer's directions, or until crisp and golden brown.

  4. Serve immediately with Cherry Sauce or butter, syrup, honey and/or fresh fruit if desired.
