  1. 3/4 cup sugar

  2. 1 large egg

  3. 1 1/2 cups all purpose flour

  4. 2 tsp baking power

  5. 1/4 tsp salt

  6. 1/4 tsp ground nutmeg

  7. 1/4 cup vegetable oil

  8. 3/4 cup milk (low fat is fine)

  9. 1 tsp vanilla extract

  10. 2 tablespoons melted butter , for dipping

  11. 1/2 cup sugar , for rolling

  12. 1 tablespoon cinnamon , for rolling

  1. Pre-heat oven to 350 degrees and grease muffin tin with butter or use paper liners.

  2. In a large bowl, beat together sugar and egg until light and fluffy.

  3. In small bowl, mix together flour, baking powder, salt, and nutmeg.

  4. Pour dry mixture into wet mixture and stir until well combined.

  5. Add in vegetable oil, milk, and vanilla extract and mix well.

  6. Pour into muffin tins (regular or mini), filling each about 3/4 full.

  7. Bake for about 15 minutes until tester comes out clean.

  8. While the muffins are cooking...

  9. Melt the butter in a small bowl in the microwave.

  10. Stir together sugar and cinnamon in another small bowl.

  11. When the muffins are done allow to cool for a few minutes, until you are able to handle them easily.

  12. Dunk the tops of the muffins in the melted butter and then the cinnamon-sugar mixture.
