  1. 3 large eggs , well beaten

  2. 1 cup raisins

  3. 1 teaspoon vanilla extract

  4. 1 cup butter , softened

  5. 1 1/3 cups brown sugar , packed

  6. 3/4 cup granulated sugar

  7. 2 1/2 cups all-purpose flour

  8. 1 teaspoon salt

  9. 1 teaspoon ground cinnamon

  10. 2 teaspoons baking soda

  11. 2 cups quick-cooking oatmeal

  12. 3/4 cup pecans , chopped

  1. Combine eggs, raisins, and vanilla extract in bowl and let stand--covered for 1 hour.

  2. Preheat oven to 350°.

  3. Cream together butter and the brown and granulated sugars.

  4. Add flour, salt, cinnamon, and baking soda; mix well.

  5. Add raisin mixture, oatmeal, and optional chopped nuts. The dough may seem a little dry; but it will be fine.

  6. Drop by tablespoonfuls onto an ungreased cookie sheet about 2 inches apart.

  7. Bake for 10-12 minutes until lightly browned.

  8. Cool on wire rack.

  9. Notes: Recipe works well doubled.

  10. Time to make does not include the 1 hour needed for soaking the raisins.

  11. You can use golden or dark raisins.
