  1. 2 cups all-purpose flour

  2. 1 1/2 teaspoons baking powder

  3. 1 teaspoon sugar

  4. 1/2 teaspoon salt

  5. 3/4 cup plain nonfat yogurt

  6. 2 tablespoons vegetable oil

  7. 2 tablespoons water -- see note

  1. Preparation : 1. Mix together flour, baking powder, sugar and salt in a large bowl and make a well in the centre.

  2. Mix together yogurt and oil and pour into well.

  3. Knead ingredients together for 10 to 15 minutes, adding up to 2 tablespoons of water only if and as necessary until a soft, smooth dough is formed.

  4. Place dough in a greased bowl, cover with a kitchen towel and place in a warm, draft-free location for 2 hours.

  5. Form dough into balls [recipe says 5 or 6, but I think 9 or 10 would be a better target] and flatten each ball by hand into a 6-inch circle or oval [or use a 6" tortilla press to flatten]. Cook on a griddle for 1 or 2 minutes on each side, flipping frequently.
