  2. 1 c Finely crushed vanilla

  3. -wafers 1/2 ts Ground cinnamon

  4. 1 tb Egg white

  5. Vegetable oil cooking spray

  6. --CHEESECAKE--

  7. 16 oz Low-fat cottage cheese

  8. 8 oz Light cream cheese

  9. -(Neufchatel), at room -temperature 1/3 c Sugar

  10. 1 tb All-purpose flour

  11. 2 tb Orange juice

  12. 1 1/2 ts Grated orange rind

  13. 1 ts Vanilla extract

  14. 1 lg Navel orange, sectioned,

  15. -membranes removed 1 pt Strawberries, sliced thinly

  16. 137 per serving and the fat to

  17. 5 grams, excellent

  18. 1. Heat the oven to

  19. 350 degrees. Combine the vanilla

  20. 2. Spray a 9-inch springform pan with cooking spray.

  21. 10 minutes. Cool. Reduce oven temperature to

  22. 300 degrees.

  23. 3. Combine the cottage cheese, cream cheese, sugar,

  24. 4. Bake until set in the center,

  25. 35 to 40 minutes.

  26. Cool in the pan. Refrigerate until cold. Loosen the sides of the cake with a small spatula and remove the pan rim. 5. Combine the orange sections and strawberries.
