  1. 2 c Blueberries; frozen

  2. 3/4 c Maple syrup

  3. 1 ts Orange peel; grated

  4. 1 tb Cornstarch

  5. 2 tb ;water

  6. 3 Eggs; beaten

  7. 3/4 c Milk

  8. 1 ts Vanilla

  9. 1/4 ts Nutmeg

  10. 8 sl Bread

  11. 3 tb Margarine

  12. Sugar, powdered

  1. Combine blueberries, maple syrup and orange peel in a small saucepan.

  2. Dissolve cornstarch in water; add to blueberry mixture.

  3. Cook and stir until mixture boils; reduce heat and simmer 1 minute or until mixture thickens.

  4. Combine eggs, milk, vanilla and nutmeg; mix well.

  5. Dip each slice of bread into egg mixture.

  6. Cook each slice in small amount of butter in skillet or on griddle about 2 minutes or until golden brown on each side.

  7. Place one slice on each individual plate, spread with 3 tablespoons blueberry mixture, top with second slice and 1 tablespoon blueberry mixture.

  8. Sprinkle lightly with powdered sugar.
