  2. For the salad :

  3. 1 cup white corn kernels

  4. 3 cups yellow corn kernels

  5. 2 medium zucchini, sliced diagonally

  6. 2 large ripe red tomatoes, peel, seeded and diced

  7. 2 cups arugula, washed and torn

  8. 2 fresh pimentos, or 2 red bell peppers, julienned

  9. 1 cup chopped fresh parsley

  10. 1 medium red onion, diced

  1. Place all the ingredients for the salad in a salad bowl and chill in the refrigerator for 1 hour.

  2. Then lightly toss with the dressing and serve.

  3. To prepare the pequin vinaigrette :

  4. Place all the ingredients for the dressing in a food processor fitted with a steel blade and process.

  5. Scrape down the bowl with a rubber spatula. Turn on the machine again. Process until well blended.
