  9. 1/3 c molasses

  10. 1 c pumpkin

  11. 1 egg white -- whipped

  12. 1 3/4 c unbleached flour

  13. 3/4 c brown sugar -- packed

  14. 1/2 tsp baking soda

  15. 1/2 tsp baking powder

  16. 2 tsps cinnamon

  17. 1/2 tsp nutmeg

  18. 1/4 tsp cloves

  19. 1/4 tsp ginger

  20. 350. Prepare

  21. 8 muffin pans with cooking spray and flour; set aside. In a mixing bowl, combine sour cream, molasses,

  22. pumpkin, and egg white. In another mixing bowl, combine flour,

  23. sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and ginger. Mix wet ingredients with dry ingredients just until

  24. moistened. Use an ice cream scoop to fill muffin pans two thirds

  25. full. Bake for about 15 minutes.
