  1. 8 ounces Rigatoni

  2. 3 tablespoons Olive oil

  3. 1 large Onion -- sliced

  4. 2 mediums Zucchini -- sliced & halved

  5. 3 cups Fresh tomatoes -- diced & peeled

  6. teaspoon Salt

  7. 1 Bay leaf

  8. teaspoon Pepper

  9. teaspoon Oregano

  1. In large skillet, saute onion in hot oil until tender. Add zucchini, tomatoes, bay leaf and seasonings. Simmer covered for 15 minutes; uncover and simmer for 10 minutes longer. Discard bay leaf.

  2. Meanwhile, cook rigatoni as directed on package; drain. Serve rigatoni topped with zucchini sauce.
