  1. 1 cup 237ml Lentils

  2. 1 tablespoon 15ml Olive oil

  3. 2 Garlic cloves - minced

  4. 1/2 lb 227g / 8oz Spinach leaves - washed, stemmed and chopped

  5. 1 Ca plum tomatoes

  6. 2 tablespoons 30ml Tamari

  7. 2 teaspoons 10ml Curry powder

  8. 1/4 teaspoon 1 1/3ml Grated ginger

  9. 1/4 teaspoon 1 1/3ml Cinnamon

  10. 1/4 teaspoon 1 1/3ml Nutmeg

  1. Recipe Instructions Wash lentils. Cook till tender but firm. Heat olive oil in large pot and when hot add garlic. Saute for 1 minute. Add spinach leaves and steam till they wilt. Add lentils and rest of ingredients. Cover and simmer for 15 minutes. Serve over rice. Nava Atlas, "Vegetariana"
