  1. 2 teaspoons 10ml Cucumbers (medium)

  2. 2 Green chillies

  3. 1 teaspoon 5ml Coriander finely chopped

  4. 1/2 teaspoon 2 1/2ml Tamarind bits

  5. 1 Curryleaves

  6. 2 Tomato chopped

  7. 1/2 teaspoon 2 1/2ml Wheat flour

  8. 1/2 teaspoon 2 1/2ml Dhania powder

  9. 1/4 teaspoon 1 1/3ml Turmeric powder

  10. 3/4 teaspoon 3.8ml Chilli powder

  11. 3 Asafoetida - (3 to 4)

  12. 1/4 teaspoon 1 1/3ml Cumin & mustard seeds

  13. Salt to taste

  14. 1/2 cup 118ml Water

  15. 1 tablespoon 15ml Oil

  1. Cut cucumbers lengthwise in 1/2" wide strips Chop these strips into 1/2" pieces.

  2. Chop tomatoes too, slit green chillies, destalk curry leaves.

  3. Dissolve chilli powder, dhania powder, turmeric and salt in the water Heat oil in a heavy pan. Add seeds, allow to splutter. Add asafoetida.

  4. Add chillies, curryleaves and tomatoes. Stir, add cucumber pieces.

  5. Stir, add tamarind, cover and cook for 5 minutes.

  6. Sprinkle coriander add flour, stir and simmer covered for 1 minute.

  7. Take off fire, serve hot with phulka, roti or paratha.

  8. Making time: 15 minutes Makes: 2 servings Shelflife: Best fresh, though refrigeration and reheating is also ok.
