  1. 1 cup uncooked rice (not Minute rice)

  2. 1/2 cup beef broth (or water)

  3. 1 can tomatoes and green chiles (I use Rotel brand)

  4. 1 TBSP butter

  5. 1 tsp salt and 1/2 tsp black pepper Meat mixture

  6. 2 TBSP EVOO

  7. 1 med sweet yellow onion, diced

  8. 1 bell pepper, diced

  9. 1 fresh or 2 canned jalapenos, optional

  11. 1/2 lb LEAN ground beef

  12. 2 cans or 4 cups black-eyed peas, UNDRAINED

  13. 8 oz cheddar cheese

  1. In 2 qt saucepan cook rice mixture 18-20 minutes. It will be WET~this is GOOD. In the meantime, pre-heat deep skillet and heat EVOO till it shimmers. Saute' onion, bell pepper and jalapeno(s) till tender. Add ground beef and salt/black pepper; brown on medium heat; drain, if needed. Gently fold in black-eyes and rice mixture. Now pour into 13"x9" pan that has been sprayed with Pam. Put cheese on top. Heat in oven on 350* for 20 minutes or untill cheese is bubbly. ~~SHARE and ENJOY~~
