  1. 3 pounds mussels, scrubbed and beards pulled off

  2. 3 tablespoons butter

  3. 3 tablespoons garlic, chopped

  4. 1 1/2 tablespoons cracked or coarse-ground pepper

  5. 6 tablespoons oyster sauce

  1. Tap shells of any mussels that gape; if they dont close, discard them. Put mussels in a 5- to 6-quart pan. Add 1⁄2 cup water, cover, and bring to a boil over high heat. Reduce heat and simmer until shells pop open, 5 to 10 minutes. Pour juices from pan and save.
