  1. TVP Joes

  2. 1 can (28 oz) ground tomatoes

  3. 2 - 2 1/2 c tvp, small flakes

  4. 1 1/2 large onion, sliced thinly then chopped

  5. 8 cloves garlic, pressed

  6. 1 large green bell pepper, chopped

  7. 1 c water

  8. salt and optional hot pepper to taste

  9. 3 1/2 T oil, at the most

  10. Soak tvp in tomato "sauce". Pan fry onion until lightly browned

  11. and tender, add garlic and a little water, heat thoroughly. Set

  12. 1/2 this mixture aside, and add

  13. 1/2 the tvp-tomato mixture. Blend

  14. and heat thoroughly adding oil as necessary, and salt to taste.

  15. Repeat with remaining onion-garlic mixture and tvp-tomato mixture.

  16. Set aside. Deglaze pan with remaining water, add green pepper,

  17. and cook until green pepper is tender but still brightly green.

  18. Mix this into the "joes" mixture and adjust seasonings.
